MEDITERRANEAN LEMON CHICKEN

Ingredients
- 2 chicken drumsticks, skin on
- 50ml olive oil
- 1 tbsp minced garlic
- 1/2 lemon
- 1/2 tsp rosemary, fresh or dried
- 1/4 tsp cayenne pepper
- 1/4 tsp rock / kosher salt
- Sprinkle of pepper
Method
- Preheat the oven to 180°C fan
- In a medium bowl, mix together the olive oil, garlic, lemon and all spices and seasonings
- Place the chicken in a baking dish and pour over the mixture, coating fully
- Roast for 40 minutes, or until the chicken is cooked through and browning on the top
- To serve, drizzle the remaining cooked sauce from dish over the chicken.

Avocado Salad – Nutritional Information (per serving, serves 2)
Ingredients
- 1/4 cucumber
- 1 avocado
- Handful of cherry tomatoes
- 1/2 onion
- Handful of olives
- Handful of feta cheese
- Chopped parsley to taste
- 1/4 tsp rock / kosher salt
- Sprinkle of pepper
- 1/2 lemon
- Drizzle of olive oil
Method
- Dice the cucumber, avocado, tomatoes and onion
- Add all the ingredients to a salad bowl and season with the salt, pepper, lemon and olive oil
- Mix well and serve along side the chicken
